Fiesta Seafood Noodle Soup

  • 200gr udon
  • 2 eggs
  • 6 broccoli florets
  • 2 mini pokcoy florets
  • 6 slices of carrot
  • 4 pieces of pea
  • 50gr mushrooms hioko
  • 2 pieces of radish (if desired)
  • 50gr silken tofu
  • 4 pieces of Fiesta Ebi Fry
  • 2 pieces of Fiesta Shrimp Roll
  • 1 sheet nori, thinly sliced, for sprinkling

The Soup:

  • 1 tablespoon cooking oil, for frying
  • 1 clove garlic, grated
  • 1 tsp fresh ginger, grated
  • 750 ml broth
  • 1/8 teaspoon ground pepper
  • 1 tsp salt
  • 1 tsp fish sauce
  • 1 scallion, finely sliced


How to Cook:

  1. Boil udon until cooked. Remove, drain and set aside.
  2. Boil eggs with maturity according to taste. Peel the skin and set aside.
  3. Take broccoli, pokcoy, carrots, snow peas, mushrooms, and silken tofu.
  4. Rinse, blanching (except mushrooms and tofu), drain and set aside.
  5. Fried Fiesta and Fiesta Shrimp Fry Ebi Roll until golden brown.
  6. Lift, drip. Arrange all materials inside the bowl.


How to Make the Sauce:

  1. Heat broth over the pot.
  2. Heat oil on a griddle. Saute garlic and ginger until fragrant.
  3. Add the garlic and ginger into the boiling broth.
  4. Sprinkle salt and pepper. Enter the fish sauce. Stir and cook until done.
  5. Pour into soup bowls. Sprinkle scallions. Serve with udon. Enjoy while it is still warm
