The sauce of this snack has a sour fresh taste, and of course delicious!
Fiesta Seafood Ebi Fry
2 canned pickles (Gherkins)
3 small pieces of red onion
1/2 lemon juice
2 egg yolks
1 piece of garlic finely chopped
250ml olive oil
1 tsp dijon mustard
How to Cook:
To make the mayonnaise beat the egg yolks until pale and fluffy, add the chopped garlic in a smooth and Dijon mustard. Whisk until smooth and add the olive oil slowly while shuffling the dough until the dough emulsify.
Cut pickles and red onions boxes and add it to mayonnaise.
Add the lemon juice and whisk until blended.
Season with pepper and salt

When the dough is too thin add the olive oil and whisk until thick.
